Better than cigars

One of the drivers at our newspaper became a father this week, so yesterday he brought in plates of tamina. It looked like dark confectioner's sugar mounded onto a dinner plate and studded with colored, roasted almonds.

But, in fact, this traditional desert prepared to welcome the birth of babies is roasted semolina, butter and honey.

We ate little (OK, well for some of us, not so little) portions with tiny spoons along with mint tea.

I hope the office is very fertile.


To make tamina:
500 grams of semolina flour
100 grams of butter
150 grams of honey
1 tablespoon of powdered cinnamon

Put the semolina in a pan, cook a little bit until golden, add the melted butter and honey, mix well. Shape into a circle on a platter, sprinkle with cinnamon.
